I love pancakes, but I don’t love dealing with the mess that comes with them. That’s why I love this ultra simple pancake recipe that’s so quick, you can even prep them on a weekday morning. They’re light, high in protein, naturally sweetened and the perfect good-for-you treat.

4 INGREDIENT BANANA PANCAKES

Ingredients:

  • 1 banana, mashed until smooth

  • 2 pasture raised eggs

  • 2 teaspoons flax meal

  • Big pinch ceylon cinnamon

  • Coconut oil for cooking

Directions:

Heat your pan until VERY hot, then add the coconut oil (1/2 teaspoon per pancake works well). Whisk all pancake ingredients together in a bowl. Drop 1 tablespoon of mixture at a time into the pan and cook until golden on both sides. Top your pancakes with your favorites. Here, I did organic strawberries, cacao nibs, and a drizzle of raw honey.
