What in the world are zoats?
Well, they're basically just oats cooked with zucchini to up the veggie, fiber, and phytonutrient ante of your regular bowl of oatmeal. Zucchini is such a wonderful vegetable to sneak into smoothies, desserts, and other sweet meals and snacks.
Zucchini is high in folate, Vitamin A, fiber and antioxidants. Because of its high water content, it breaks down nicely in these zoats, making them hardly noticeable (but also the star of this breakfast!).
What you'll need:
- 2 medium zucchini, grated or finely chopped
- 3/4 cup frozen or fresh strawberries (or other berry)
- 1 cup rolled oats
- 1 cup coconut milk
- 2 tablespoon chia seeds
- 2/3 cup water + 1 cup boiling or extra hot water
- Huge pinch cinnamon
- Pinch sea salt
- 2 scoops vanilla protein powder (optional. non-soy)

In a small pot, bring boiling/hot water to a boil with the zucchini. Once zucchini is soft (about 8 minutes), add cinnamon, sea salt, and any other spices you may be using. Then, add oats, chia seeds, coconut milk and remaining water. Stir in protein powder if using. Add strawberries and them break down (2-3 minutes). Cook until your desired consistency, adding water if it gets too thick. Top with toppings if using! <3
